If you’re looking for something new to try and help spice up your salads, why not grill apricots? They’re already a delicious dried fruit, ripe with nutrients and flavor. Grilled and combined with pistachios, your salads are about to get a lot more creative and flavorful!

Grilled Apricot Salad with Pistachios & Honey

Ingredients for 2 servings
-100 g mâche salad leaves
-1/2 lime
-1 avocado
-4 apricots
-80 g mozzarella
-30 g unsalted pistachios
-2 tsp olive oil
-2 tsp apple cider vinegar
-1 tsp honey
-Dried oregano


  • Wash apricots, cut in half and pit.
  • Heat grill pan. Place apricots cut-side down in pan and grill for approx. 3 min.
  • Allow apricots to cool, then cut into wedges.
  • Wash and drain salad.
  • Cut avocado in half. Pit, peel and slice.
  • Dice mozzarella.
  • Halve lime and squeeze juice.
  • Coarsely chop pistachios.
  • To make the dressing: whisk olive oil, lime juice, honey, vinegar, oregano, salt and pepper.
  • Combine salad, apricots, avocado and mozzarella in a bowl and mix with dressing.
  • Place salad on plates, sprinkle with pistachios and serve.
