Vegan cooks will love this simple potato and cauliflower curry. Don’t be surprised if you find yourself craving more curry in your life after making this savory and irresistible dish! The best part — this curry won’t take you the entire night to cook!

Aloo Gobi – Potato and Cauliflower Curry

Ingredients for 1 serving:
-1 yellow onion
-10 g ginger
-2 garlic cloves
-10 g fresh coriander / cilantro
-2 g garam masala
-2 tsp chilli powder
-1 tsp turmeric
-3 tbsp vegetable oil
-salt

Instructions:

  • Peel and dice potatoes.
  • Wash cauliflower and cut into florets.
  • Heat 2 tbsp oil in a pan, add potatoes and cauliflower and fry for about 10 min. Stir frequently.
  • In the meantime – peel onion, garlic and ginger then finely dice.
  • Remove potatoes and cauliflower from the pan. Put 1 tbsp oil in the pan and lightly sauté onions and 6 garlic for about 3 min.
  • Add chili powder and turmeric, and cook for about 30 sec.
  • Put potatoes and cauliflower back into the pan, season with salt and add some water. Reduce heat and steam everything for about 5 min. with the lid on.
  • Finally, season with garam masala.
  • Wash coriander/cilantro, shake dry, and chop.
  • Garnish curry with cilantro and serve.
