Serve Up Perfectly Crispy Mouth Watering Zucchini Fritters

What better way to satisfy a craving for deliciously fried foods than to whip up some zucchini fritters? These fritters are relatively low in calories despite their fried nature, and the yogurt-feta-mint dip offers a smooth herby balance to the crispy crunch. This meal is perfect to eat on its own, or paired with other foods as part of a spread for your next dinner party.

Recipe for Zucchini Fritters with Yogurt-Feta-Mint Dip

Ingredients for 2 servings
-3 zucchinis / courgettes
-10 g fresh mint
-1/4 lemon (juice)
-1 egg
-1 green onion
-100 g Greek yogurt
-40 g feta cheese
-60 g wheat flour
-2 tbsp vegetable oil


  • Wash and coarsely grate zucchinis/courgettes.
  • Place in a sieve, salt, and allow to sit for about 10 min. until the salt has drawn out the water from the zucchinis.
  • Wash mint, shake dry and pluck leaves.
  • Add Greek yogurt, crumbled feta and mint leaves to a blender and blend. Alternatively, finely chop mint leaves and mix with finely crumbled feta and yogurt.
  • Season to taste with lemon juice, salt and pepper then set aside.
  • Wash green onions and cut into rings.
  • Squeeze zucchini thoroughly to remove as much liquid as possible.
  • Put in a bowl. Add egg, flour and green onions. Mix everything well and season with pepper.
  • Heat oil in a pan. Use a spoon to scoop zucchini mixture to the pan. Fry the fritters on both sides until golden brown.
  • Serve fritters with yogurt-feta-mint dip.
