A Protein Packed Spinach Chicken Dinner with Healthy Carbs

Chicken and spinach compliment each other in this tasty dish, as two ingredients that are easy to flavor. Paired with couscous, you’ll finish eating feeling full but not stuffed, thanks to a great source of healthy carbohydrates. Enjoy!

Spinach Chicken with Couscous

Ingredients for 2 servings
-300 g chicken breast (boneless and skinless)
-120 g whipping cream
-4 sprigs fresh thyme
-10 g butter
-1 clove garlic
-80 g fresh spinach
-40 g sun-dried tomatoes
-2 tsp paprika powder
-120 g couscous
-240 ml vegetable broth
-2 tbsp vegetable oil
-2 tsp wheat flour


  • Slice sun-dried tomatoes.
  • Wash and drain spinach.
  • Peel and finely dice garlic.
  • Wash thyme, shake dry and pluck leaves.
  • Season chicken breast with salt, pepper and paprika powder.
  • Heat oil and butter in a pan and fry chicken breast on both sides until golden brown. Then, remove from pan and keep warm.
  • Add thyme, garlic and sun-dried tomatoes. Fry for 1 min.
  • Add flour to the pan and fry for another 30 sec.
  • Add cream and season to taste with salt and pepper.
  • Add chicken back to the pan and let simmer for 2-3 min.
  • Add spinach and cook for another 2 min. until the spinach has wilted.
  • Prepare couscous according to package instructions using vegetable broth.
  • Serve chicken with couscous.
