Eat Good, Feel Good: A Quinoa + Chicken Bowl with a Coconut Kick

The great thing about grain bowls, is that there’s no limit to how creative you can get! Quinoa Chicken Bowl with Coconut Dressing

Ingredients for 2 servings
-160 g quinoa
-160 g chicken breast
-1/2 cucumber
-2 carrots
-50 ml coconut milk
-80 g Greek yogurt
-1/2 lime
-30 g sliced almonds
-10 g fresh parsley
-1/2 tsp sriracha chili sauce
-2 tsp coconut oil
-1/2 tsp chili powder
-1 tsp curry powder
-1/2 tsp allspice
-1 tsp sugar
-salt
-pepper

Instructions

  • Cook quinoa according to package instructions.
  • Toast almonds in a pan without oil for 3-4 min. Remove from stove and set aside.
  • Cut chicken into strips. Season with salt, chili powder, curry powder and allspice.
  • Heat coconut oil in a pan and fry chicken for 3-4 min. Remove from pan and allow to cool.
  • Wash cucumber, halve lengthwise and deseed with a spoon. Cut into thin slices.
  • Peel carrots and grate coarsely.
  • Wash parsley, shake dry and chop.
  • For the dressing – mix coconut milk, Greek yogurt, and sriracha chili sauce. Season with salt, pepper and sugar.
  • Mix all ingredients with the dressing, sprinkle with lime juice and enjoy.
