A Savory and Hearty Chorizo Pasta, from Our Friends at KptnCook

If you’re a chorizo lover who’s been trying to figure out a good way to incorporate the flavorful meat into your meals, look no further. This pasta dish has everything — the mild kick of spice from chorizo, a warm and full sweetness from sweet potatoes, and the always decadent crunch of roasted walnuts. Treat yourself!

Pasta with Chorizo, Sweet Potatoes, and Roasted Walnuts

Ingredients for 2 servings
-180 g penne pasta
-80 g Chorizo
-1/2 sweet potato
-100 g tomatoes
-1/2 yellow onion
-30 g walnuts
-10 g fresh parsley
-1 tsp paprika powder
-1/2 tsp chili flakes
-2 tbsp vegetable oil


  • Coarsely chop walnuts and toast in a pan without oil for about 5 min.
  • Cook pasta according to package instructions.
  • Peel and dice sweet potatoes.
  • Wash tomatoes and cut into large pieces.
  • Slice chorizo.
  • Peel onion and cut into half rings.
  • Heat oil in a pan and add the chorizo and onions. Fry until the chorizo is nicely browned and the onions are soft. Remove from pan and set aside.
  • Add sweet potatoes and, if necessary, some oil to the pan. Fry for about 5 min.
  • Add some pasta water to the pan and simmer until the sweet potatoes are cooked through.
  • Add tomatoes and chorizo to the pan, and mix everything well. Season with salt, pepper, paprika powder, and chili flakes.
  • Drain pasta, add to the pan, and mix well.
  • Wash parsley, shake dry, and chop.
  • Arrange pasta on the plates, sprinkle with walnuts, parsley and serve.
