All the Sprouts and Broccoli You Love, in One Healthy Salad

Whoever said that salads needed to have conventional bases like lettuce, or even kale, was wrong. This salad comes to you with not one, but two bases, that pair perfectly. Broccoli and brussels sprouts are not only excellent sources of fiber, which aid in healthy digestion, but a great food to eat that will leave you feeling full after your salad! Bet that doesn’t happen with lettuce now, does it?

Recipe for Broccoli and Brussels Sprout Salad with Honey-Mustard Dressing

Ingredients for 2 servings
-200 g Brussels sprouts
-1/2 broccoli
-20 g sliced almonds
-20 g parmesan cheese
-1 tbsp dijon mustard
-1 tbsp honey
-1 tbsp apple cider vinegar
-2 tbsp walnut oil
-Salt
-Pepper

Instructions

  • Toast almonds in a pan without oil for 3-4 min. Remove from stove and set aside.
  • Wash broccoli and cut into small florets.
  • Wash Brussels sprouts, remove any discolored or loose outer leaves. Slice Brussels sprouts finely.
  • Grate parmesan cheese.
  • Mix prepared ingredients in a bowl.
  • To make the dressing – mix walnut oil, apple cider vinegar, dijon mustard and honey. Season with salt and pepper.
  • Add dressing to the bowl, stir well and enjoy.
