Feast Your Eyes and Taste Buds on This Spicy Yogurt Bowl

There are rice bowls, noodle bowls, pasta bowls…but how about a yogurt bowl, packed with cooling spices? Yogurt is packed with probiotics that make it great for any time of day. You probably never thought to have a yogurt centric meal for dinner, but the combination of chickpeas, cucumbers, and radishes, will make this a perfectly nutritional and protein packed meal that’s quick to eat any night of the week!

Recipe for Yogurt Bowl with Spicy Chickpeas & Cucumber Radish Salad

Ingredients for 2 servings
-200 g cooked chickpeas
-200 g plain yogurt
-1/2 cucumber
-1/2 bunch radishes
-10 g fresh parsley
-1 green onion
-1/4 lemon (juice)
-4 tbsp olive oil
-4 g garam masala
-1 tsp turmeric
-1/2 tsp chili flakes
-Salt
-Pepper

Instructions

  • For the spice mixture: mix garam masala, turmeric, and chili flakes.
  • Heat 1 tbsp olive oil in a pan and fry chickpeas for about 3 min.
  • Season with the spice mixture. Toss well to spread the spices. Set the pan aside.
  • For the salad, wash and finely dice cucumber.
  • Wash radishes and finely dice as well.
  • Wash green onion, clean, and cut into rings.
  • Wash parsley, shake dry, and chop.
  • For the dressing, mix 3 tbsp olive oil with lemon juice. Add salt and pepper.
  • Mix cucumber, radishes, green onions and parsley with the dressing.
  • Serve chickpeas on yogurt with the salad.
